What a restaurant kitchen deep clean actually covers

October 3, 2026·Raeforge Building Services

Every restaurant has a closing routine: wipe the line, mop the floor, take out the trash. That keeps you running day to day. A professional kitchen deep clean is something else entirely. It is the systematic, top-to-bottom reset that handles everything the nightly routine cannot reach. Here is what it actually covers.

Exhaust hoods, filters, and ductwork

Grease builds up in the hood plenum, on baffle filters, and inside the first stretch of ductwork. This is both a fire hazard and one of the first things a health inspector looks at. A deep clean includes removing and degreasing filters, scrubbing the hood interior, and cleaning accessible duct surfaces. Most kitchens need this quarterly at minimum; high-volume fry operations often need it monthly.

Cooking equipment

Fryers get drained, the vats get scrubbed, and the exteriors get degreased. Grills, flat-tops, ranges, and ovens get a full breakdown clean: grates and burners removed, carbon and grease buildup scraped and dissolved, drip trays emptied and washed. This is the work that extends equipment life and keeps cooking surfaces performing evenly.

Floors, walls, and drains

Kitchen floors take the worst of it. A deep clean means degreasing the full floor surface, scrubbing grout lines on tile, and cleaning under and behind equipment that never moves during service. Floor drains get pulled, scrubbed, and flushed. Lower wall sections and base areas get degreased where mop splatter and cooking residue accumulate.

Walk-ins, storage, and prep areas

Walk-in coolers and freezers get emptied, the shelving gets washed, gaskets get wiped, and floors get scrubbed. Dry storage gets the same treatment: shelves cleared and wiped, expired product flagged, and the floor underneath cleaned. Prep tables, cutting boards, and smallwares get a full sanitizing pass.

What it does not replace

A deep clean does not replace your daily close-down routine or your regular hood service contract. Think of it in layers: daily cleaning keeps the kitchen safe tonight, scheduled deep cleans keep it compliant and efficient all year. Most Cook County restaurants land on a quarterly deep-clean schedule, with monthly service for the hood and fry stations in high-volume kitchens.

The bottom line

If your kitchen has not had a professional deep clean in the last six months, grease is accumulating in places your closing crew cannot reach. That shows up as failed inspections, equipment breakdowns, and fire risk.
